Interestingly, all replacement 55/56 temperature gauges/sending units that I have used will read cold to start and then move towards "H" as it warms up.

You answered your own question. Vacuum from the "spider" valve opens the vacuum operated control valve on the manifold which lets hot water into the heater core.

Ditto for what Paul & Blacktie said. There is a way to remove the front springs reasonably safely but there is a lot of force and you need to be careful if the car is unloaded (engine/trans out, frame-off resto for example). You probably will need some type of spring compressor to get the spring...
