I am trying to remove the clock face from the clock and the only thing that is stopping me from doing this is the knob that adjust the time from the front of the gauge. Can I remove it, without causing any damage ?

Yep, just gently grasp the small metal shaft from the back with some needle nose pliers and undo the chrome knob counter clockwise.
